That's A Wrap



This "Breakfast Quesadilla" allows ingredients to be added, subtracted and/or substituted based upon your personal taste. Not to mention, everyone at your table will think you put a lot of effort and thought into the meal since you are able to personalize it. You can substitute pancetta for bacon, spinach for arugula, choose any cheese you absolutely love, as well as, add any other meats or veggies. Be creative and remember recipes are just an outline...feel free to color outside the lines a little.




Ingredients: 
2 slices good bacon
2 slices cheese of choice (I use sliced sharp yellow cheddar)
1 small handful of arugula, thoroughly cleaned (will provide texture and slight peppery flavor to dish)
1 large egg
1 flour tortilla
Salt and pepper to taste
Directions:


1. In a medium size skillet place two slices of bacon over medium heat. Cook 3-4 minutes per side until edges are beginning to brown. Do not overcook the bacon because it will ruin the texture of this dish.









2. Remove bacon from the skillet placing it on a plate covered with a paper towel to allow excess bacon fat to absorb.










3. In the same skillet with the remaining fat from the bacon, crack the egg and lower heat to medium-low.

4. Watch egg carefully and as soon as the white begins to brown around the edge, lower heat and cover it with foil for 1 minute. At the same time, prepare the tortilla by laying 1 slice of cheese down.











5. Check egg and flip it over in skillet. Lightly salt and pepper. Let cook on the opposing side for 30 seconds then remove promptly and place it on the cheese side of the tortilla.

6. Add bacon slices, arugula, and second slice of cheese.




7. Fold tortilla over. Return tortilla to skillet and it place on 

medium heat.











8. Cook until it is lightly brown and flip over, repeating the same for the alternative side.

9. Dress plate with arugula and sliced avocado if desired.

10. Remove tortilla, slice it in half and serve.
